“Parma, c’era una volta … il maiale. Dalla cultura del prosciutto alla Sicurezza Alimentare Europea”

A childhood memory of a beautiful trompe l’oeil depicting a plate and the writing Qui si magnifica il porco  was the starting point of the research on pork for Gioacchino Giovanni Iapichino, Associate Professor at the Surgery Science Department of the Universita’ di Parma and Parma Delegate of the Accademia Italiana della Cucina

The Professor’s interest is mostly on the anthropological aspect. His studies led him to focus and widen his field of studies up to the point of analyzing the ancient relationship between this animal and mankind, and its importance in the various communities, paying particular attention to the city of Parma. It is because of Parma’s role that the city has been chosen as a European authority on food safety.


The event is being organized in collaboration with Accademia Italiana della Cucina, within the framework of the events of the Italian Cultural Institute aimed at promoting EXPOMilano.  The event will be followed by food tasting.
