“Baba’ e citta’. Viaggio tra dolci, architetture e luoghi”

A conversation and a tasting of baba’ by Fabrizio Mangoni with the participation of the master confectioner Ciro Scarpato

Professor Fabrizio Mangoni, an architect, town planner and gastronomic historian is the founder of the theory that compares human characters to sweets. Going back to the origins of the creation of a dessert that, according to his theory, borders on perfection, Mangoni leads us through the various moments in the European history and pays particular attention to the relationship between the transformation that this dessert goes through and the transformation of the architecture and of the three cities where this dessert arrives: Nancy and the city of Enlightenment, Paris of mid-19th century and Naples. Stanislao Lekzinsky the former king of Poland and duke of Lorena, prisoner of the Ottoman Empire, brings back in France the design of oriental architecture and the experience of reading the Arabian nights.  The dessert created by him in the beginning was dry and contained raisins from Corinth and Smyrna and smelled of saffron and which was named Ali Babà. From this starting point began the journey in time and space which made the baba’ arrive in Naples in the shape and taste which we nowadays know.
