“La cucina romana” with Sandro Pietrini & Francesca Cafisse

Sandro and Francesca, hosts of Salvino’s by The Black Sheep. The restaurant has already attracted many of us with the excellence of their cuisine and the convivial and warm welcome we always receive.

Sandro, Francesca and their daughter Chiara have been in Malta for a year and a half and have been settled in and offer genuine Lazio food. When they were asked them to talk about some of Ostia’s culinary traditions, they immediately mentioned “Spaghetti con le telline”.

Very much sought after and appreciated since ancient Rome, “telline” keep up a tradition of fishing that has been preserved up to today in the fishing community of that Coast. The area became very well known during the Dolce Vita era, when actors and film directors from Cinecittà, among them Federico Fellini, were attracted by Roman beaches.

Francesca has different options for those who love fish with their pasta, including an unusual “salmon and zucchini lasagna” and a “paccheri with seabass and cherry tomatoes”. And don’t miss her desserts! Francesca prepares exquisite small “crostata” with jam or ricotta, which perfectly match Sandro’s smooth coffee.

Well, that’s a little flavour of the evening to come, so make sure you come early! Francesca and Sandro will answer all your questions and treat us to some delicious food over a glass of wine, courtesy of Giacomo Contrafatto and Alessandro Aliotta, owners of Enocult Malta.
